Hearty Red Soup
This tasty soup is full of lycopene, a phytonutrient found in tomatoes. Heating tomatoes makes this phytonutrient more easier for the body to use. Research shows that it protects us against different types of cancer. The soup is also a good source of beta carotene, another phytonutrient which provides us with vitamin A.
Ingredients
4 medium size Vine tomatoes
1 medium sized carrot
1.5 inch piece of ginger
2-3 cloves
Salt and pepper to taste
Boil all the above ingredients in 4 cups of water. Continue to boil till 1.5 cups of water has evaporated. Cover it and wait for 10 minutes to allow it to cool. Grind this mixture and warm it on low flame for 5-10 minutes. Add salt and pepper per your taste. Your soup is ready.
