The Rainbow Salad
This is a colorful salad that uses different colored vegetables and fruits that represent different nutrients. It is preferable to eat organic fruits and vegetables when possible.
Ingredients:
1 cup low salt chick peas-triple washed
2 cups spinach-cleaned and cut
6-8 salad tomatoes cut in half
1 medium sized cucumbers sliced
1 steamed medium sized beets sliced (you can peel the raw beets and steam them for 40-50 minutes)
1 medium sized carrots washed and sliced
1 small radishes washed and sliced (optional)
1 Brussels sprouts washed and cut
5 black whole olives (Wash the olives to remove excess oil and/or salt)
half cup of Artichoke hearts (optional)
Mix all the above ingredients in a salad bowl.
Salad dressing
Mix the following ingredients using a whisk
2 tablespoon Olive oil
Juice of 1 lemon
salt to taste
1-2 teaspoon ground black pepper
half teaspoon of garlic powder
1 teaspoon of balsamic vinegar
